In this hands-on sausage making class, we’ll take you and your friends through the process creating sausages from scratch. Learn how to make three types of gourmet sausages, then enjoy a sumptuous three-course dinner with your own handmade sausages featuring as the main course. It’s a meat lovers experience through and through!

The evening starts with a welcome drink and canapés. In the next three hours, Chef Michael Erlik, will teach you everything from the basics of artisan butchery to the techniques used to case and twist the sausages into links. Drawing on two decades of fine dining experience, Chef Michael has prepared three exotic sausage recipes. Using superior grade meat and the finest gourmet produce, you will make:

  • French Chipolatas: Country style pork and herbs sausage. Seasoned with wine and green peppercorn
  • Spanish Salchicha: Made of various pork cuts, trimmed, cut and minced. Seasoned with saffron, sun dried tomatoes and garlic
  • Tunisian Merguez: Australian leg of lamb & beef, deboned & minced. Mixed with Ras El Hanout spices


First, you’ll learn which cuts of meat to use and how to prepare them, including how to debone a whole leg of lamb and trim it, how to cut the beef and grind the meats into a fine mince. Finally, you’ll learn how to season the meats for the best flavours. From there, it’s on to the stuffing station where the magic happens! We use premium Australian lamb casings to stuff the meat and produce sausages that are ready to be cooked and sampled at our Chef’s table.

For dinner, your handmade sausages will be grilled to perfection and served alongside seasonal salads & Truffle-Beurre D`Echire mashed potatoes. Finish with a Pear Tart Alsacienne and coffee and tea. Complimentary free flow wines will be served throughout the evening.

At the end of the experience, you will also be able to take home a box of your handmade sausages to share with your family and friends.

 

Number of People
This Experience Voucher is valid for up to 4 people in a private session. Additional participants may join at an additional cost of $1350 per person, up to a maximum of 20 people.

This experience lasts for 3 hours.

Bookings can be made at any time from Monday to Sunday, subject to availability. Bookings must be made at least 2 weeks in advance.

Participants are advised to wear closed-toe shoes. Aprons will be provided.
