Internationally well-known, Pakistani cuisine is one of the most flavourful with a heritage dating through many centuries. While it’s best known as the rich food laden with saffron, nuts and fruits and exotic spices fit for aristocrats like ‘nawabs’ and ‘rajahs’ who were served these creations on silver and gold dishes, there is also the humble side of this cuisine that is equally pleasing in its variety of flavours and textures.

The Excitement and Zing of Spices
Spices are an important feature of this cuisine. Understanding each spice and its contribution to the taste of a dish will take away the mystery of using spices. Freshly roasted and grounded spices will be used to create an amazing array of appetizing and aromatic dishes. See, smell and touch the spices used in this cuisine as Chef Rehana Sheikh explains each one’s role in a spice blend.

The Cooking Experience
In this experience, you will be invited into a traditional Pakistani home . You will learn how to prepare a delectable 3-dish Pakistani meal with easy to understand recipes, accompanied by a lively discussion of essential cooking tips. Hands on participation makes it fun and sets an enjoyable mood enabling you to see that cooking Pakistani food is very doable.

Then afterwards, enjoy a delicious spicy Pakistani meal that you helped prepare! At the end, go home with all the easy to make recipes, a helpful spice guide on how to buy and store spices and a special take-home gift!

 

Menu Options
MENU 1
  • Zafrani Biryani – The grand saffron mutton, lamb or chicken biryani cooked with Basmati rice, yoghurt, caramelized onions, pungent spices and Spanish Saffron
  • Aloo Ka Raita – Steamed potato chunks in spicy yoghurt with fragrant herbs
  • Saag Methi – Spinach cooked in assorted spices, tomatoes and an aromatic dried herb ‘methi’
MENU 2
  • Korma – A rich dish of chicken or lamb cooked in onions, yogurt, almonds and a 5-spice blend
  • Mattar Pulao – Basmati rice flavoured with cloves, cardamom, cinnamon and cooked with onions and peas
  • Chapli Kebabs – Crisp beef kebabs made with tomatoes, chillies and dried pomegranate seeds then flavoured with a blend of spices
  • Tandoori Sabzi – Assorted spiced and grilled/baked vegetables
MENU 3
  • Maachi Masala – Fish fillets in a hot and spicy sauce
  • Mung Ki Khitcheri – Sprouted mung beans cooked with Basmati rice spices and onions
  • Pakoras –Spicy vegetable fritters coated with chick pea flour
  • Green Chutney – A hot chutney made with ginger, green chillies, mint, coriander and lemon
MENU 4
  • Murgh Tikkas – Barbecued/grilled chicken in a special spice blend
  • Baigan Burhani – Grilled eggplant in spicy sauce
  • Bhindi Keema – Crispy okra topped hot minced beef
  • Til Kay Naan – Baked sesame soft, flat bread
MENU 5
  • Dal Baghar – Red lentils cooked with tamarind and spices topped with toasted, fragrant seeds and crispy garlic
  • Aloo Achaar – Chunks of potatoes cooked in pickling spices
  • Khajur Ki Chutney – Date and ginger cooked in brown sugar, red chillies and rice vinegar
  • Puris – Puffed, fried bread with toasted cumin seeds

  • Gajar Ka Halwa – Grated carrot cooked slowly in milk, then browned in butter or oil with cardamom, nuts and raisins
  • Suji Ka Halwa – Toasted semolina cooked in a sweet cardamom syrup with almonds and pistachios
  • Gulab Jamun – Fried soft milk balls in rose flavoured syrup
  • Kulfi – Pakistani style ice-cream with pistachios and cardamom
  • Zarda – Basmati rice cooked with nuts and raisins in a saffron flavoured syrup with cloves, cardamom and cinnamon
  • Sheer Khorma – Toasted vermicelli cooked in milk with assorted nuts with dried dates and dried coconut slivers added in then flavoured with ‘kewra’ a floral essence

This experience is valid for 2 people with a maximum group size of 6 people.

Experience Location
Pokfulam.
Upon request, this experience may also take place at the participant's home. An assessment of cooking facilities will be undertaken and additional transportation charges will apply.

Availability and Duration
This experience must be booked with at least 3 days notice. Bookings can be made on all days except Sundays and public holidays. The experience lasts 3 – 3.5 hours and can be booked in one of two slots:
1) Lunch session 11.00am–1.30pm
2) Dinner session 6.00pm–9.30pm

This experience will be cancelled and rescheduled in the event that the Hong Kong Observatory issues a red or black rainstorm warning signal or a typhoon signal number 8 or above.

What to wear
Please dress in casual and non-flammable clothing with minimum jewelry.

Suitability information
This experience is suitable for adults. Please notify us of any religious or health dietary restrictions on the booking form. Upon request, menus can be customized for children and young adults.

Extra information
This experience includes demonstration and participation in preparing a three-dish Pakistani meal. Step by step recipes and relevant tips will be given as handouts. Complimentary tea and soft drinks, dessert (on request), all Pakistani style will be offered. Participants will also receive a take-home special gift at the end of the experience.

We followed Rehana’s very clear, step by step instructions and the handout was fine. She was friendly and very happy to answer any questions we had as we went along. There were 6 of us attending the course which I thought was a good number. We were able to compare dishes and have a little chat too!
